Aspectos tecnologicos e envolvidos na preparação de uma bebida proteica de girassol, soja e soro de queijo

RESUMO

With the objetive of studying the technological aspects of producing a protein beverage, a variety of extraction experiments were carried out on a laboratory scale, using sunflower seeds and soybeans as the raw materials, and water and cheese whey as the liquid mediums for extraction. A traditional process was used in these experiments, consisting of three basic operations: maceration, grinding and centrifugation. Using grains with and without the seed coat, a discontinuous system was studied for the maceration phase, testing tempe¬ratures between 10 and 70°C. It was observed that the level of water absorption, the loss of solids, the extraction yields of solids and the final pH of the maceration medium, were noticeably affected. Due to a microbiological effect, the final pH of the maceration liquids, and consequently the extraction yields solids, suffered a drastic fall at temperatures of 35 and 45 °C. With respect to the grinding operation, solid:liquid ratios between 1:6 and 1:16 were tested, using grains of soybean, sunflower and in mixtures. It was shown that the ratio 1: 10 gave the best results with respect to the composition and yields of the extracts. A sunflower-soy mixture of 70:30 (%, w/w) together with cheese whey (1:10, grains:whey) was chosen, for these experiments, on the basis of both its functional advantages, due to the increase in the physical stability ofthe extract, and its nutritional advantages, due to the high chemical score obtained. In addition the use of cheese whey instead of water as the liquid medium for extraction, apart from these nutritional and technological advantages. resulted in greater extraction yields, thus paving the way for a new potencial use of cheese whey.
