Determinação do teor de gluten por ensaio imunoenzimatico em alimentos industrializados

Coeliac Disease (CD) is a permanent gluten intolerance that affects children and adults, and is characterized by damage to the villi in the small intestine causing nutrients malabsorption. Symptoms of CD can range from the classic features, such as diarrhea, growth failure, vomiting, weight loss, anemia, to an acute malnutrition which can takes the patient to death in the absence of the right diagnosis. The incidence of gluten intolerance has been reported to be 1:300 in European countries, while in Brazil there is no statistics. The treatment for CD is based on diet. People suffering from this disorder should eliminate gluten from their diet for the entire life. A gluten-free diet means avoiding ali products that contain wheat, rye, barley and oat. It would be recommended for patients to examine the food labels very carefully. Although the adherence to a gluten - free diet may seems simple, in fact there is a series of difficulties in the maintenance of this diet, not only from the patient perspective, but also due to the following reasons: gluten can be found in unexpected sources, composition of foods is not exactly known and the food labeling is quite often incomplete. In order to check what was mentioned above, 177 Brazilian products were analysed for determination of gluten. A commercial enzyme immuno assaywas used based on a monoclonal antibody to omega-gliadin to analyse 83 bakery products, 34 beverages, 24 sauces, 22 sausagesand 14 dehidrated soups. The results showed gluten presence in 84% of the examined products. In 19 out of 98 products claimed to be g/uten free by nature, gluten was not found. The majority of the samples had levels under 0.016% of gluten. Four samples had a gluten level between 0.016 and 0.046%, while just one sam plehadleveiof gluten between 0.10 and 0.30%. It is suggested that during the food processing, the naturally g/uten free products were contaminated with the toxic protein.Such contamination is unacceptable for the patients who suffer from CD.Besides this, a lot of products had incomplete labeling,not calling the consumer s attention for the presence of gluten
