RESUMO

The objective of this study was to investigate the effects of total weight and of sex on the processing yields of cultivated surubins. 261 fishes were analyzed, probably hybrid (Male, of Pseudoplatystoma coruscans x Female, Pseudoplatystoma fasciatum), being 123 males (total weight between 1.305 to 4.995 g) and 138 females (between 1.540 to 6.670 g), from two commercial fish farms. The examined characteristics were used to calculate the yields as a percentage of total weight (%): eviscerated weight with head yield - PECC; head percentage - PCAB; viscera percentage - PVIS; gonads percentage - PGON; gill percentage - PGUEL; fillets of belly with skin yield - PFBP, fillets of loin with skin yield - PFDP, total fillets with skin yield - PFTP, fillets of belly yield - PFBS, fillets of loin yield - PFDS; total fillets yield - PFTS; bones percentage - POSS, skin percentage - PPEL, waste percentage containing the skin PRES1, waste without the skin PRES2. There has not been a significative effect of total weight for the variables PGUEL and PPEL. In relation to the variable PGON showed very dispersed values, not being possible in this work separately study the effect total weight and sex. For the others characteristics the effect of total weight was significative, with reasonable adjustment to the hyperbolic (I) model theoretical; being the effect of larger importance for values smaller that 3000 g. Did have a reduction of the yields with the increase of the values total weight for the variables: PNAD, PCAB, POSS, PRES1, PRES2, tending the a stabilization above of value of 3000g. In the others characteristics the behavior was in the sense of increase. Did not have difference between the sexes in relation the behavior of effect total weight for the characteristics PNAD, PCPEVCAB, PFBP, POSS, PFBS and PRES1. In accord with the adjusted models, in the variables PVIS, PFBP, PFBS and PFTS os males shall exhibit values, in the main superior to the of the females into a determinate total weight. For the variable PGUEL the mean values were significantly superior for females, already for the variable PPEL not had significative difference.
