Estimativa da ingestão diaria dos conservadores acido benzoico e acido sorbico no Brasil

RESUMO

The daily intake of benzoic and sorbic acids and their respective sodium, potassium and calcium salts from selected food categories was estimated in Brazil in the year 1999. The Budget method was used as a tirst screening procedure for the estimation of the safety aspects of the maximum permitted levels of benzoates and sorbates established by the Brazilian legislation. This screening indicated that benzoates should be further investigated. In a second step, the daily intake of the preservatives was estimated based on national food consumption data and on analytical determinations of these additives. 156 samples corresponding to 3 batches of different brands and/or flavors belonging to tive food categories were analyzed. The total of 156 samples carne from 45 samples of soft drink (15 brands), 42 of fruit juice (2 brands, 9 types of fruit), 18 of margarine (6 brands), 24 of yogurt (8 brands) and 27 of cheese (9 brands). The national food consumption data used in this study carne from surveys carried out by the Brazilian Institute of Geography and Statistics (IBGE) in the period 1995-1996, and by Datamark in 1998. Benzoate and sorbate levels in the samples were determined by high performance liquid chromatography coupled with a photodiode array detector. Detection of benzoic and sorbic acids was carried out at the wavelengths of 228 and 260 nm, respectively. The analytical column was a C18 one and the mobile phase consisted of 81% water, 2% 0.005 M ammonium acetate buffered at pH 4.2 with glacial acetic acid and 17% acetonitrile. Only one sample presented a preservative levei above that permitted by the legislation in force. The calculated benzoate and sorbate intake values indicated that their potential daily intakes for the average consumer was lower than their respective acceptable daily intakes. soft drinks were identified as the main source of benzoate intake
