Estudo comparativo do valor biologico das proteinas do leite de vaca e da soja em formulas infantis

RESUMO

The protein quantity and quality of infant formulae are continuously being reevaluated. Two formulae, designated Product 1 and product 2 were under nutritional assays. Product 1 contained a whey/casein mixture (ratio 6:4), providing 2.46g protein/l00kcal whereas Product 2 contained soybean protein isolate, providing 3.0g protein/l00kcal. Methionine-enriched casein (control) and two diets derived from Product 1 and 2 were fed to weaning rats as the sole source of protein in diets containing 8% protein. Data allowed calculation of Food Efficiency, Relative Protein Efficiency Ratio (RPER%), Relative Net Protein Ratio (RNPR%), True Protein Digestibility (TPD%) Protein Digestibility-Corrected Amino Acid Score (PD-CAS%) and True Protein Digestibility-Corrected relative Amino Acid Rating (TPD-Corrected RAAR%). Blood, liver and small intestine were collected for complementary analyses. The first set of assays, Food Efficiency, RPER%, RNPR% and TPD% were similar for both diets. PD-CAS% and TPD-Correct RAAR% conferred a better status to Product 1. It was concluded that an evaluation which includes both TPD and amino acid composition reveals fine differences between products. The urea, creatinine and total lipids determinations did not variy according to the protein differences. It was likely that the performance of proteins were enough to assure an adequate metabolism to rats during the short period of the assays. Liver and small intestine weights were similar in both cases. Our data suggests that Product 1 (Whey/casein) could be a more adequate protein for infant feeding than to Product 2 (soybean isolate) when the bioassays are compared with the amino acid profiles. However, the higher total protein content improved protein quality of Product 2.
